The packaged meat contains no added water or “machine harvested” meat. The meat is not processed until about 10 days after slaughter. This aging process, in a temperature–controlled cooler, lowers the moisture content of the meat so, when it is frozen, ice crystals do not form in the meat. This adds to the quality and reduces the amount of “bleeding” when the meat is thawed.
