We price our meat based on carcass weight, but it translates, after shrinkage and processing to about $6.50 per pound (approximately $700 per quarter) of packaged meat. By selling ¼ carcass or greater, we are able to provide expensive cuts at prices comparable or lower than ground round or hamburger patties in most organic or specialty stores. Our price includes processing and handling, but shipping and delivery is extra, although we try combine orders to minimize costs.
